Australian lamingtons |
This Australian icon ranks right up there with Pavlova and Vegemite.
It is believed to be invented by accident over 100 years ago.
Charles Wallace Alexander Napier Cochrane-Baillie (Lord Lamington) has been credited with the discovery of the lamington.
The maid for Lord Lamington (eighth governor of Queensland) accidentally dropped a sponge cake in some melted chocolate.
So that the sponge cake would not be messy, they added coconut.
The result was a delicious new invention, named after Lord Lamington.
